Not Breakfast

Here’s what I commonly eat for, no, not breakfast, but rather, a late lunch.

That’s scrambled tofu, Smart Bacon, and steamed broccoli. Yummy!

I like to cook up a large batch of scrambled tofu, so that I can just bring it with me to work every day. I use two 16-ounce packages of extra firm tofu (the kind in water, not vacuum-packed) and cook it up with some onion (sauteed with 1/2 tablespoon of olive oil), tumeric, salt, and 1-2 tablespoons nutritional yeast.

At times, I add green, red, and orange peppers to the onions, but my favorite side is sauteed fresh spinach and mushrooms in garlic and oil (which replaces the broccoli).

Then there’s the Smart Bacon, oh how happy I am to have found this project. I throw it right onto the George Foreman grill for a few minutes, and I have myself some “bacon.”

Weight Watchers just came out with hamburger buns (2 points each) and one thing I hate is wasting calories on bread, so these buns are a really great find. And they’re delicious, too. When I feel like having some bread with my scramble dish, I’ll put some of my scramble onto one of these buns with one slice of the “bacon.” This especially tastes good with the spinach and broccoli.

And it’s all naturally low fat, too. Can’t beat that.

Oh, and the buns also taste great with Tofutti cream cheese or hummus or — of course — veggie burgers!

    “Smart Bacon”? What, pray tell, is that made of?

    I bet it would be smashing if you toasted the buns, too!

    Lately I’ve been obsessing over Black Bean Burgers. I’ve been eating them for both lunch and dinner almost daily. Now I want a Black Bean Burger with “bacon” on it!
